Focus on vegetable dishes

After a Christmas full of heavy meals and endless eating, it might be nice for everyone to have a change of pace, with lighter, vegetable-based foods taking over the daily meal. Whether it's a lifestyle change, a New Year's resolution or simply a drive for a healthier lifestyle, the Veganuary challenge, which starts in January, is the perfect partner.

This year, for the third time, we're joining the challenge, with vegan/vegan dishes taking centre stage throughout January.
Veganuary is becoming an increasingly popular "start of the year" challenge in this country too, with lots of help available online, including recipes. You can also find them in the POLCZ range of ready meals vegan dishes that can be a quick and filling help on those days when you don't feel like cooking or don't have the time. And they're also great as a staple, so you can make several lunches or dinners a day from one jar.

Of course, we won't leave you without help, so we've got some recipes to help you make a variety of plant-based dishes for your Veganuary challenge days!

What is veganism?

Before we dive into recipes for a variety of vegetable dishes, let's start with the basics. The Veganuary Challenge is a 30-day programme that introduces participants to the correct way to eat a plant-based diet through tried-and-tested recipes, guides and scientific articles. And why is it worth it for them/us? It is now a scientific fact that reducing meat consumption contributes to the health of our environment, as it is less polluting than raising animals in often inhumane conditions. In addition, eating less meat, more vegetables and fibre is clearly a healthy way of life, even if you only introduce vegan delicacies into your daily routine for 1 to 1 month. Of course, you can also use the tried and tested recipes later on, so alternating meat and vegan days is a great way to plan your weekly menu.

Why is a vegan diet good for us?

Hungarian mushroom stew

When we think of vegan/vegan food, we often think of complicated dishes, but we don't have to dig very deep into our recipe books to find nutritious vegetable dishes.

Vegetables can also be made into meatballs

Veggie burger with vegetables

Our chilli beans are not only a super choice as a warming dish, but also as a vega burger also perfect as a fag! Grab a bottle off the shelf for some weekend cooking time and make some delicious burgers!

Super-fast tortilla roll, full of all the good stuff

Ingredients for 4 rolls:
  • 1 bottle POLCZ Moroccan chickpeas 
  • 2 larger pieces of carrot
  • mixed small salad vegetables (arugula, baby spinach)
  • 4 large tortilla sheets (you can make this at home, you just need flour, olive oil, salt and water)
  • salt, pepper, possibly grill vegetable seasoning (for carrots)
  • a little coconut oil.

Peel the carrots, halve them lengthways and cut them into smaller pieces. Place on a baking tray lined with baking paper, drizzle with a little oil and season. Then they are ready to go into the oven, where they will brown nicely at 200°C for about 15 minutes. Once the carrots are ready, you can start assembling the tortilla rolls.

Stack the ingredients neatly on top of each other (being careful not to overcrowd the roll, or you won't be able to fold it in). When everything is in place, fold the sides over each other, then gently fold in the bottom and top. Next, you can do a little toasting, which means frying both sides of the tortilla in a little oil until nicely browned. The whole process takes about 15 minutes, but it takes even less time to destroy the rolls.
